2022年は秩父ならではの少し変わった形をしたクウォーターカスク〝ちびダル〟のウイスキーを中心に、幾多の個性を持つ複雑な味わいをつくりあげました。特に〝ちびダル〟の鏡板に使用したミズナラ材由来のフレーバーは、時間とともに現れては心地よくゆらぎ、全体の柔らかなフルーティーさを優しく包み込んで更なる個性と奥行きを与えてくれます。
また、構成原酒の一部として使用したオロロソシェリー樽原酒（11年）とヘビリーピーテッド原酒（8年）が秩父の力強い跳躍力を感じさせ、この作品にぴったりの仕上がりとなりました。
バレエの物語が背景にあるオリジナルウイスキーですので、ブレンダー室では登場人物の個性や表情だけでなく、舞台の雰囲気とその後のストーリー展開も含めて話し合いながら試作を重ねました。夢描く騎士「ドン・キホーテ」の冒険物語と共に、味わいのイメージを深めていただければとても嬉しく思います。
In 2022, we focused on whisky matured in Chichibu’s uniquely shaped quarter casks known as chibidaru, crafting a complex flavor profile woven from countless distinctive characteristics. In particular, the flavor derived from the mizunara oak used for the chibidaru’s end panels emerges and gently sways over time, enveloping the whisky’s soft fruitiness and adding even greater individuality and depth.
Among the component whiskies are an 11-year-old Oloroso sherry cask whisky and an 8-year-old heavily peated whisky, both of which convey Chichibu’s powerful leap forward, perfectly complementing this creation.
As this is an original whisky inspired by a ballet story, our blending room discussions went beyond the personalities and expressions of the characters—we also considered the atmosphere of the stage and the unfolding of the story itself, conducting repeated trials to capture the essence.
