緑茶の香気抽出に関する研究」は、香気成分の分析から処方の設計、実際の生産までに2年の時間をかけました。文久元年（1861年）創業「北川半兵衞商店」が手掛ける「祇園 北川半兵衞」と共同で開発したスピリッツです。\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e緑茶の魅力はその渋みと甘みのバランス。煎茶は茶葉をお湯で抽出することにより風味を適切に引き出します。そして茶葉をアルコールで抽出しても、ほぼ同様の風味を引き出すことができます。しかし、茶葉に含まれる有機物も抽出されるため、時間が経つと茶色く変化し、風味も変わってしまいます。これは、茶葉由来のカテキンやクロロフィル等が、酸化等の化学反応を起こしてしまうためです。\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eそこで祇園
